How to make the BEST Pumpkin Muffin Cakes

Okay I am not going to lie, I have been shoving my face with the yummiest of yummy pumpkin creations I have experienced to date all morning..

I saw this recipe floating around on pinterest, so I thought I'd give it a try with  my own flare, of course.


-Box of white or yellow cake mix {I saw recipes that used spice cake, but I like to use my own spices}
-1 Tbs cinnamon, pumpkin spice, and cloves to taste. {I used about 3 crushed cloves}
-1 egg
-1 can of pumpkin

First preheat your oven to 350°. {High altitude people, check the conversion because I don't know.}
Mix all of the ingredients together (ignore the instructions on the cake box), and put them in a muffin or cake pan like so......



The mixture is pretty thick, so worry not. OH, and if you aren't going to use muffin liners, or you are making a cake out of this, don't forget to grease the pan.

Mine took about 20 minutes to cook, if you use a round pan it will probably take about 25.. Just use the ole' knife trick by sticking a knife or tooth pick through the thickest part of the cake and if it comes out dry you are good to go.

{The wet batter will stick to the knife or tooth pick if it is not done, and for the love of god don't burn them, they are too good to waste!}

THEN I made a cinnamon-almond glaze, here's how to make that!

-1.5 cup of confectioners sugar
- about 3 TBS of milk (soy, almond or coconut milk should so the trick too)
-a couple drops of Almond extract (or 1tsp of vanilla-- just remember Almond extract has a STRONG taste and can be over powering)
-a dash of cinnamon

stir it all together, and dip your muffins in for some glazing fun!

Then try not to eat the whole batch in one sitting..

These are seriously good, and so easy to make.

.....and yes, I will be making these on Thanksgiving!
