Instacipe! Poor Man's pesto {see below for recipe}, tomato, mozerella and red bell pepper on croissant.
{Almond pesto= Pesto made with almonds instead of pine nuts, just as good and a lot less expensive to make fresh}

Poor Man's Pesto:
2 cups packed fresh basil leaves
4 cloves garlic
1/4 cup ALMONDS
2/3 cup extra-virgin olive oil, divided
4 cloves garlic
1/4 cup ALMONDS
2/3 cup extra-virgin olive oil, divided
dash of red pepper flakes (optional)

In food processor blend basil, garlic, red pepper flakes and almonds until coarsely chopped, add oil in slowly and run processor until it is the consistency you desire.
I call this poor man's pesto because usually pine nuts cost an arm and a leg, and I always have basil, olive oil and almonds on hand.
I use this on sandwiches, pastas, fry seasoning.... it's pretty much good on everything.
